I honestly can’t get over that batch of Emeril’s Creole seasoning and I’ve been adding it to everything. Topped with a super crunchy bread crumb topping tossed with fresh herbs, you’ll have a light, cheesy mac and cheese with a spicy, Creole kick. Add in the cheese and stir over low heat until cheese. Once the noodles are cooked, drained and the butter has melted, stir the milk mixture into the noodles until incorporated. Meanwhile, in a separate small bowl, whisk together the eggs, evaporated milk, cayenne, 1 tsp. mind. And it comes together in 30 minutes. See, as the evaporated milk and starch mixture cooks, the starch molecules swell up, thickening the sauce, while the evaporated milk adds a concentrated source of milk proteins. Add the butter and stir until butter has melted. Add the pasta and 1 teaspoons salt and cook, stirring often, until al dente. Bring 2 quarts of water to a boil in a large Dutch oven. In a medium bowl, whisk together the eggs, 1 cup of the evaporated milk, dry mustard mixture, salt, and pepper set aside. Using low-fat evaporated milk in place of half and half or regular milk is the perfect solution for a lighter mac and cheese for a couple different reasons. But this isn’t your ordinary mac and cheese. In a small cup, dissolve the dry mustard in the water set aside. Many recipes for macaroni and cheese begin with a bechamel, or thickened milk sauce, as a base that will ultimately become the cheese sauce.

Watch to make sure the liquid doesn’t completely evaporate. Continue to simmer stirring frequently until noodles are cooked (about 20 minutes). Add in macaroni noodles, reduce heat to low. So in an effort to incorporate real dairy products into my diet, that’s how this mac and cheese was born. In a saucepan combine a pinch of salt, milk, garlic powder, onion powder, butter and water. And when purchasing dairy products, I only buy products with the REAL® Seal, which lets me know that I am buying products with the wholesome goodness of the U.S.-produced cow’s milk. As you could imagine, dairy is a huge part of our diet, loaded with calcium, potassium, protein, and vitamin A among many other important nutrients that keep the body in optimum health. Comfort food never tasted so good!Ībout 90% of Asian Americans are lactose intolerant, and I’ve been incredibly blessed to not be included in this percentage. A quick and easy, no-fuss mac and cheese made in less than 30 min.
